Enhancing Bioactive Compound Bioaccessibility in Tapirira guianensis Juices through Ultrasound-Assisted Applications

This study evaluated the chemical profile and bioactive compounds in Tapirira guianensis juice samples under high-intensity ultrasound (US) effects. T. juices were produced processed using US with varying energy (0, 0.9, 1.8, 2.7, 3.6 kJ·cm−3) for 10 min. The treated total acidity, color, pH, phenolic compounds, anthocyanins, carotenoids, antioxidant capacity, vitro digestibility, as well quantification of by HPLC-DAD. hydromethanolic extract obtained from exhibited presence two major categories polyphenols, specifically galloylquinic acids flavonols. Overall, technology was responsible inducing some negative changes, such carotenoid degradation, but also positive changes beverages, increased content, improved anthocyanin content. However, beneficial effects prominent, thus opening opportunities to develop new functional beverages this fruit limited scientific studies.
